KOMUGI brand is an operator in Japanese concept bakery and café business.
This position is responsible for the planning and operation of bakery division, which include of daily production activities, new products development, product pricing determination, food cost control and budgeting, and bakery kitchen management, as to achieve the company goals, requirements, and expansion plans.
This position requires personnel who is reliable, visionary, result driven/oriented and also with strong leadership and good planning skills.
RESPONSIBILITIES :
Responsible in overall planning and management of bakery production activities (for wholly owned outlets, franchise outlets and distribution business)
Quality and quantity fulfilment of business requirement to meet retail sales and customers demand
Prepare, implement, execute and update Standard Operating Procedures and policies.
Ensure smooth daily bakery division operation and to ensure full compliance in terms of the company’s professional certification applications, e.g. Halal, HACCP, and etc,
Manage and control the consistency of productions quality and quantity
Check output to verify products quality and quantity
Investigate and resolve complaints regarding quality
Ensure overall bakery kitchen’s cleanliness, tidiness, and hygiene. Assure proper sanitation practices are followed strictly by all kitchen staff
Ensure impeccable personal hygiene of all bakery production staffs
Maintain and monitor compliance with work safety, security, fire and health regulations
Maintain and improve doughs and breads preparation methods, recipes, etc to ensure that they are prepared in accordance to our policies or in an acceptable/ approved manner
Provide production knowledge training, kitchen management knowledge, and coaching to the production team on a regular and continuous basis.
Recommend and implement production changes, revise and improve products/recipes to cater for on-going market demand (for both wholly owned outlets, franchisee/licensee owned outlets and distribution business).
Conduct regular reviews on product variety and develop more new products
Properly maintain and handle all bakery equipment.
Manage, control and administer the overall food costs by maintaining accurate records of all ingredients used in bakery division.
Manage, control and keep sufficient inventory. To perform stock- take on a regular basis
Schedule staff hours and assign duties efficiently
Other ad-hoc duties assigned by person/persons nominated by The Company.
REQUIREMENTS :
Min. 5 years of relevant working experience in relevant industry
Candidate must possess at least a Degree / Diploma / Certificate in Bakery/Patisseries/Culinary
Strong knowledge in bakery industry
Self-high requirement in work assignment and target given
Ability of managing a big group of production staffs that ranging from various background and age group
Ability of provide training and coaching
Resulted oriented
Possess communication, problem solving, leadership, and analytical skills
Knowledge of safety and health, fire and security, quality control standards and practices.
Overseeing Central Kitchen operations & ensuring excellent kitchen cleanliness and hygiene.
Ability to spot and resolve Central Kitchen’s problems efficiently.
Provide vision, guidance and leadership focused around delivering of bakers’ KPI and increasing year on year performance.
Excellent communication, organization, problem solving and leadership skills.
Neat, clean and professional appearance.
